Pico De Gallo
Pico de gallo is a simple fresh salsa (sometimes called salsa fresca and salsa crudo) that goes well on just about anything.
- 1 cup white onion - finely chopped
- 2 medium jalapeno peppers - stemmed, seeded, and deveined, finely chopped
- 1 large lime - juiced
- 1 tsp. kosher salt
- 1 1/2 lbs. ripe red tomatoes - cored and seeded, finely chopped
- 1/2 cup cilantro - finely chopped
Chop everything, then mix it all together.
Let sit covered in the fridge for a couple of hours to allow the flavors to marry.
