Champurrado Recipe (Chocolate Atole)

Champurrado, or chocolate atole is a thick and silky masa harina based drink, except, unlike traditional atole, it has Mexican chocolate.

  • Add the milk, the piloncillo, and the cinnamon stick to a small saucepan. Bring to a low boil, then reduce to a simmer and cover. Let simmer for 10 minutes, stirring frequently.
  • Break the chocolate into small pieces, then add to the milk. Cook for an additional 5 minutes, whisking often to ensure the chocolate is completely dissolved.
  • Add the masa harina to the hot water and whisk until thoroughly combined. Mix into the chocolate milk and whisk well. Bring back to a simmer and cook, uncovered, for an additional 10 minutes.
